nigiri sushi formowane w dłoni. Jest to najpopularniejsza obok maki-sushi forma tej potrawy. Większe niz maki. Ryż formuje się w owalne „paluszki”, następnie kładąc na ulepiony wcześniej ryż jednego rodzaju rybę lub owoc morza np: nigiri z łososiem, tuńczykiem lub krewetką. Do zestawu dajemy wassabi (chrzan japoński) oraz sosem sojowy.
